Ingredients:

  • 1 white onion
  • 1 tbsp coconut oil
  • 2 cloves of garlic
  • 1 tbsp freshly grated ginger
  • ½ red chilli/1/2 tsp dried chilli flakes
  • 1 head of broccoli
  • 1 can of coconut milk
  • 200ml vegetable stock

 Method:

Finely chop onion and red chilli.  Heat the coconut oil in a large pot and sauté the onions with a pinch of salt for 5 minutes or until softened.  Add the garlic, ginger, chilli and sauté for 2 minutes.

While this is cooking, chop up the broccoli then throw it in with the onion mix.  Stir for 30 seconds with a pinch of salt and then pour over coconut milk and veggie stock.

Simmer for 20 minutes then blend until smooth.

Please note:  Take care when blending hot liquids in high powered blenders!!

Top with fresh herbs, toasted nuts/seeds/coconut or sautéed prawns for added goodness J
